Self-checking systems to secure of consumer health protection

                                                                                                                                           

On the basis of Article 5 of EC Regulation 852/2004, all operators in the food chain are required to establish self- control systems to ensure the health protection of consumers. We assess the respective in house systems on the basis of community guides on good practice for hygiene or for the application of HACCP principles (Article 8 and 9 of EC Regulation 852/2004) with regard to a professionally competent implementation of risk-based own-checks and their efficiency. Focus on the correct application of the HACCP system for risk analysis and setting of CCPs.
