Own-check system for safeguarding consumer health

 

Article 5 of Regulation (EC) No 852/2004 requires that all food business operators in the food supply chain establish in-house systems of checks to ensure that the health of consumers is reliably protected. Based on the Community guidance to good practice for hygiene or for the application of the HACCP principles (Articles 8 and 9 of Community Regulation 852/2004), we audit an operation’s in-house systems established to ensure the effectiveness and competent implementation of risk-based self-inspection and self-monitoring procedures. The focus is on the correct application of the HACCP to the processes of risk analysis and CCP identification.
